Every moment I spend with my mom seems a little more significant now that I know very soon it will not just be the two of us, we will soon be toting around what I assume will be the cutest most beautiful baby girl that I have ever laid my eyes one...
Friday I spent the day touring the Temecula Wineries with my Mom, Aunt, Cousin and good friend/ Hairdresser as a way for my Mom and I to thank them for their help with my Baby Shower. We had a wonderful lunch and enjoyed each others company on a beautiful Fall day.
Saturday begin with some garage saling around Canyon Lake with my Mom, followed by breakfast, thrift store perusing, grocery shopping and FALL BAKING!! We made her yummy pumpkin bread, acorn cookies (found on Pinterest) and Grandmas Albondigas soup! It was so fun cooking in her beautifully remodeled kitchen and just spending time together.

Albondigas Soup Recipe
1. Wash Veggies (potatoes, Carrots, Onions, Celery)
2. Peal Carrots
3. Chop veggies into thick chunks( they won't get soggy that way)
4. Boil around 2 quarts of water
5. Use around 2lbs. of ground beef
6. Season with salt, pepper, garlic salt, and a handful of rice
7. Crack in two eggs
8. Make mini Meatballs and place them in boiling water
9. In a frying plan, fry chopped onions and butter
10.Mix 2 small cans of tomato paste with a tbsp. of flour
11.Add tomato paste mixer to sauce pan until onions are tender
12.Add Tomato paste mixture to meatballs
13.Add more salt and pepper to taste
14.Dice potatoes thick( 4 chunks per potato)
15. Add all veggies
16. Skim the top for fat throughout the cooking process
17. Let your soup cook for another 30 mins. and then...
